Cake mix cookies are all the rage right now and for good reason! Using a cake mix makes it so you need very few ingredients to created a delicious, moist cookie that everyone will love. This recipe has a bit of a surprise in the middle too… a cream cheese filling! It’s like eating a strawberry cheesecake in cookie form!
With just a little extra work creating and freezing the cream cheese filling, these cookies become little happy masterpieces. People who normally have tremendous self-control when it comes to treats won’t be able to resist having “just one more.” I promise. I saw it with my own eyes. Enjoy!

Strawberry Cream Cheese Cake Mix Cookies
Delicious strawberry cake mix cookies with a surprise cream cheese filling!
For the cookie
- 1 Super Moist Strawberry Cake Mix
- 2 Eggs
- 1/2 Cup vegetable oil
- 1 3.4oz box Strawberry or Vanilla instant pudding
For the Cream Cheese Filling
- 4 oz. cream cheese (softened)
- 2 Tablespoons butter (softened)
- 1/2 teaspoon vanilla
- 2 Cups powdered sugar
- dash of salt
- Preheat oven to 350.
For the cookie dough
- In a mixing bowl, combine cake mix powder, instant pudding mix powder, eggs and vegetable oil. Mix together until it forms into a dough. Cover and place in fridge until ready to use.
For the cream cheese filling
- Combine cream cheese, butter, vanilla, and powdered sugar. Mix together until thick and creamy. Spoon out 1 teaspoon at a time and form into as much of a ball shape as possible onto a parchment paper or foil covered cookie sheet. Place in freezer for 2 hours to set.
When cream cheese filling is set, prepare cookies
- Scoop out 1-2 tablespoons of cookie dough and roll into a ball and then flatten into a circle. Place frozen ball of cream cheese filling in middle of flattened dough and then wrap dough around filling forming cookie back into a ball.
- Place on a lined cookie sheet and bake 8-12 minutes. When you take them out you may want to slightly flatten cookies.
