Yes, you heard that right. Roasted. Sweet Potato. Salsa.
Can you believe such a thing exists?
Well it does, and it’s delicious. And I’m sharing it with you today so you can wow your friends and family at your next gathering where you’re in charge of bringing an appetizer! Fresh, yummy and different. The three ingredients to impressing people. 🙂
ROASTED SWEET POTATO SALSA
2 large sweet potatoes, peeled and diced small
1 red onion, diced small
2 T. olive oil
3 roma tomatoes, seeded and diced small
1 avocado diced small
2 T. chopped fresh cilantro
1/4 cup fresh lime juice (from about 2 limes)
salt & pepper to taste
Preheat the oven to 450 degrees. In a large bowl, mix the diced sweet potato and onion with the 2 T. of olive oil. Spread on baking sheet and roast for about 20 minutes until the sweet potatoes are tender and browned in spots.
Take out of oven and cool. Put back in the large bowl and combine with the other ingredients. Toss to combine.
**Serving suggestions: with corn chips or crackers, on a toasted baguette, scattered over lettuce for a simple salad, stir into cooked couscous for a side dish, use as a topping for chicken tacos, fold into scrambled eggs for breakfast.
