Hey Landee readers, it’s Lu from Leesh & Lu’s Recipe Box. Today I’m sharing a recipe for one of my favorite, easy dinners or breakfasts. Anyone else like breakfast for dinner? We have it at least weekly. I love quiche! My mother-in-law has a yummy crustless blender quiche she has made for years. It’s one of those family recipes that will keep getting made for years and years to come. We love it for several reasons. 1) It’s delicious 2) you can whip it up quick in the blender (no crust making) 3) and the whole family enjoys it. That’s a triple-win in my book.
I wanted to create another version of my mother-in-law’s quiche. One with some potatoes in it. The results were fantastic! We’ve enjoyed this several times when we’ve had leftover mashed potatoes on hand. I’ve even gone to the trouble of cooking and mashing potatoes just to make this because we love it so much. You could easily use instant mashed potatoes if you prefer those. I’m personally a real potato kind of gal.
This ham & potato quiche whips up quick. You’ll grease a baking dish, sprinkle it with ham, green onions, and cheese.
Then you’ll blend some eggs, milk, mashed potatoes, chicken broth, salt, pepper and seasonings, flour and baking powder and pour it over the ham and cheese.
Then you’ll bake it for 45-55 minutes til it’s golden brown.
Dig in – those being served will probably come back for seconds! I know everyone in my family does! Enjoy.
